    This recipe is light and full of iron. Ingredients: 1 teaspoon of sesame oil 12 oz. of black eye peas (cooked) 10 oz of edamame (cooked and shelled) 8 oz of bean sprouts (mung beans) Veggie rice (cauliflower or a mix of cauliflower, rice and broccoli) 4 boiled eggs Broccoli sprouts (as much as desired) Optional seasoning: Salt Black pepper Coriander Low salt soy sauce (on the end) Preparation: Saute veggie rice with sesame oil for 5 min Add the beans sprout, edamame and spices. Saute until it is translucent (about 5 minutes). Remove from stove and add eggs, black eyed peas and soy sauce. Serve plate and add broccoli sprouts on the side of mix all together.     This is a quick and delicious salad that you can make for lunch or you can use as a side dish. Ideally, we want to eat "the rainbow ". The USDA's Dietary Guidelines recommend adults eat anywhere from 5 to 13 servings of fruits and vegetables per day depending on age, gender, physical activity, and overall health. Ingredients: 1 Tomatoes 1/2 Cucumber 2 Dry fig 5 Kalamata olives Dry tomatoes Unsalted and sliced almonds Green onions Spinach Preparation: Chop all ingredients.   • Easy One Pot Mexican Quinoa & Chicken

    Serves: 4-6 people Ingredients: 1-2 tablespoons of coconut oil or ghee 2 boneless chicken breasts cut into ½ cubes 1 cup diced red onion 2 garlic cloves, minced 1 bell pepper, sliced 14 oz can low sodium pinto beans, rinsed and drained 1 cup diced Roma tomatoes 1 cup quinoa 2 cups low sodium chicken broth 2 teaspoons cumin ½ teaspoon smoked paprika 1 teaspoon salt ½ teaspoon ground pepper ¼ cup fresh cilantro, chopped ½ cup shredded Colby cheese 1 avocado, diced ¼ cup diced green onions 2 spoons of tomato paste 1 can of corn Lemon zest 2 (4oz.) cans diced green chilies (optional) Preparation: Heat a large skillet to medium high heat. Add coconut oil or ghee to pan as well as diced chicken. Cook until chicken is no longer pink. Turning throughout, about 5-7 minutes. Remove chicken from the pan and put on a plate. Set aside. Add onions to pan. Sauté until translucent, approximately 3-4 minutes. Add in garlic, sauté for 30 seconds and immediately add the peppers. Sauté for 1-2 minutes. Add the green chilies, pinto beans, chicken broth, tomatoes, quinoa, cumin, paprika, salt, ground pepper, tomato paste, corn, lemon zest and cilantro to the pan. Stir and bring to boil. Add chicken in, stir, cover and reduce to simmer Simmer for 15-20 minutes, until liquid is evaporated and quinoa is cooked through. Remove from heat. Add cheese to the top. Place cover on and let sit for 1 minute until cheese is melted. Serve with fresh avocado, green onions and fresh cilantro. Chicken, green chilies and cheese are optional.   • Instant Pot Kitchari Recipe

    Kitchari is the traditional cleansing food which is a combination of split mung beans and white basmati rice with plenty of spices, depending on your constitution. This recipe is very easy to prepare and not only it is healthy but it has a lot of flavor as well which makes it delicious! Here's how you can easily prepare this great food with just using an instant pot: Ingredients: 1/2 cup Basmati rice 1 cup mung dal (split yellow) 6 cups (approx.) vegetable broth (or water) A bit of Himalayan salt (1/4 tsp. or so) 1 tsp. ghee 1/2 tsp. coriander powder 1/2 tsp. cumin powder 1/2 tsp. turmeric powder Handful of fresh cilantro leaves 1 and 1/2 cups assorted vegetables (zucchini, carrots, asparagus, sweet potato, mushrooms, broccoli) Preparation: Put instant pot on saute. Put in 1 tsp. of ghee and spices. Mix that all up to release the flavor. Turn instant pot off. Add the mung beans and Basmati rice into the mixture and stir. Add the veggies you like (I added onions, broccoli and mushrooms this time). Add the liquid. Select manual (or beans) setting for ten min. Once it is done, release the pressure safely.   • How to Avoid Negative Self-Talk

    Did you have a dream that you decided to give up on because the voice inside your head said you couldn't achieve it? Or do you constantly worry about not being good enough because that's how you see yourself? Although there are some benefits to being critical about your own work or actions, it's important to remember that no one should prevent you from pursuing your hopes and desires — especially yourself. Being your own worst (and unjust) critic and talking yourself down can only result in self-fulfilling prophecies that lead to failure. However, putting a stop to years of negative self-talk to become your own biggest cheerleader is easier said than done. If you need help getting started, here are three ways you can silence that harmful voice inside your mind: 1. Acknowledge Your Inner Critic A defeatist mindset can have worrying effects on how you approach life altogether. Maryville University states that there is growing research being done on the link between our mental wellbeing and learning success. This means that we are just beginning to uncover all the ways our brain can be affected by our mental health — something that negative self-talk can definitely impair. Fortunately, all hope is not lost, as the power to control your thoughts is still completely yours, you just need to find a way to do it. In this same vein, a study published on Science Daily found that one reason why you might be stuck in a negative mindset is due to a lack of mental focus. To reclaim control, you must make an effort to notice when self-sabotage is in play. By acknowledging this, you'll be able to stop it, and in turn, remember your worth. And just in case your inner critic starts to take control, remember this: You didn't travel this far just to go back, and you're here because you'll go even further. 2. Practice Positive Thinking Despite regaining control over your thoughts, it's important to keep in mind that there's still an inner voice there that you can hone. In fact, University of Toronto researchers propose that our internal voice can help us become more self-controlled. When we set our minds straight, we can map out our actions clearly, and this is all about cultivating a positive environment for your headspace. A simple yet effective method to help you be more aware is writing down each hurtful thought and then transforming it into a hopeful one. You can manifest positive affirmations better by reciting them in front of a mirror. Albeit easier said than done, purposely taking small steps can lead to great changes. You only need to keep in mind that you shouldn't be your own victim in life, for you can live victoriously. 3. Believe in Yourself As mentioned in our post on the ‘3 Reasons Why It's Important to Celebrate Yourself Everyday’, we can only work on our confidence when we start believing in ourselves. Of course, dealing with negative thoughts can be quite tricky, as they are usually habits rooted in personal matters. But when we celebrate who we are, even for the smallest of accomplishments, we can begin to let go of the negative thoughts that shackle us. Dr. Kristin Neff from the University of Texas shares that when we treat ourselves kindly, not only will we make healthy lifestyle choices, but we are also less likely to develop depression or anxiety. Remember, sometimes the only person standing in your way is yourself. Ultimately, when you celebrate who you are, you will secure a beautiful strength that will help transform any challenge into a triumph. So, decide to set your mind on your dreams instead of your fears every single day, and even though it can be a challenge in the beginning, it's only going to get easier and brighter from here on out.   • Instant Pot Oatmeal Recipe For Steel Cut Oats Or Rolled Oats

    Oatmeal are not just healthy, they are quite delicious and easy to prepare too!!! I like making oatmeal in the Instant Pot rather than over the stove or in the microwave because there’s no monitoring involved to be sure it doesn’t bubble over and cause a mess, or stirring to avoid it sticking to the bottom of the pan. It is so easy. I turn it on and take my dog to walk. When I am back from the walk, my breakfast is ready. 😋 For this recipe, you can use steel cut or rolled oats. For steel cut oats use a 3 to 1 ratio aka 3 cups liquid to 1 cup oats (less processed needs more liquid to soften the grain). For rolled oats use a 2 to 1 ratio aka 2 cups liquid to 1 cup oats (flatter surface needs less liquid to soften the grain). Ingredients: For Steel Cut Oats 2 cups water 1 cup almond milk 1 cup steel cut oats For Old Fashioned Rolled Oats 1 cup water 1 cup almond milk 1 cup old fashioned rolled oats 1 generous pinch of cinnamon 1 generous pinch of Himalayan salt 1 tea spoon of ghee 3 drops of Stevia Nuts of your choice (I like to use walnuts) Fruit of your choice - cut in small pieces if necessary (apple, blueberries, strawberries, raspberries,...) Preparation: Press the manual (or Rice) setting and set the cooking time for 3 minutes on high. Once the cooking time ends, allow the oatmeal to sit in the pot to natural release the pressurized steam (about 15 minutes). Flip the release valve using the end of a wooden spoon to release any residual steam and always face the lid away from you when opening. Optional: To add in some extra flavor, add the ghee and the oats in a pot. Select "brown/saute" and low temperature. Add the cinnamon and salt. Sauté for 1-2 minutes.   • The Hawaiian Secret of Forgiveness

    How to Find Peace Through Forgiveness “To forgive and to never forget is to never forgive in the first place.” Simply put, you’ve sometimes got to let go of what happened in order to begin to move forward. Letting go can be the most difficult part.  There is an ancient Hawaiian forgiveness process called Ho’oponopono that makes the process feel easy. In this idea of forgiving and forgetting, you don’t forget what happened, you forget the negative aspects of what happened, and you retain the wisdom. The Hawaiians have a term called, "Ano'ai." Ano is seed. Ai means to eat, or to bring it within. Within every situation in life, there is a seed that comes from that lesson. In every experience, there is a deeper lesson. If you bring that seed within, you learn from it and you move forward. Matt James Ph.D says: The biggest stumbling block to people gaining forgiveness is that they think that by letting it go, it somehow lets someone off the hook. There are some people that say, “I am not going to forgive that person because…” One of my students in Los Angeles actually said, “I am not going to forgive my ex because he needs to suffer a little bit more.” I remember looking at her from the stage and asking her in a very simple and gentle way, “How does you holding on to your baggage make him suffer?” She looked up at me and said, “Yeah, it doesn’t, but I don’t want to be friends with him anymore.” I explained that it doesn’t mean you have to be friends, it means you’re done with the baggage, you can be done with that person, and you can move on. Ho’oponopono can be done with three different types of individuals. The first one is someone who has wronged you. That is the more traditional approach. The technique is used to help you overcome baggage with someone who has crossed over a boundary. The second type of person is someone you love. This one is not talked about very much, oddly enough. Because you love them, and you want to re-connect and strengthen that bond, the idea is to forgive, gain forgiveness, disconnect to reconnect and strengthen that connection. It is a great tool to help married couples go through the process and shift their relationship with each other using Ho’oponopono. The third type of person this can be done with is someone who you have lost. Someone who is no longer with you. So that you can be free of any of the sadness and let that person live on in your memories. “Forgive others, not because they deserve forgiveness, but because you deserve peace.” - Jonathan Lockwood Huie How to practice it in 4 simple steps: There are four simple steps to this method, and the order is not that important. Repentance, Forgiveness, Gratitude and Love are the only forces at work – but these forces have amazing power. The best part of of Ho’oponopono is you can do it yourself, you don’t need anyone else to be there, you don’t need anyone to hear you. You can “say” the words in your head. The power is in the feeling and in the willingness of the Universe to forgive and love. I'm sorry Please, forgive me. I love you. Thank you. 1- Repentance – I'm sorry You are responsible for everything in your mind, even if it seems to be “out there.” Once you realize that, it’s very natural to feel sorry. This realization can be painful, and you will likely resist accepting responsibility for the “out there” kind of problems until you start to practice this method on your more obvious “in here” problems and see results. 2- Ask Forgiveness – Please, forgive me Don’t worry about who you’re asking. Just ask! PLEASE FORGIVE ME. Say it over and over. Mean it. Remember your remorse from step 1 as you ask to be forgiven. 3- Gratitude – Thank you Say “THANK YOU” – again it doesn’t really matter who or what you’re thanking. Thank your body for all it does for you. Thank yourself for being the best you can be. Thank God. Thank the Universe. Thank whatever it was that just forgave you. Just keep saying THANK YOU. 4- Love – I love you This can also be step 1. Say I LOVE YOU. Say it to your body, say it to yourself. Say I LOVE YOU to the air you breathe, to the house that shelters you. Say I LOVE YOU to your challenges. Say it over and over. Mean it. Feel it. There is nothing as powerful as Love. That’s it.   • 15 Tips for On-the-Go Eating and Staying on Track!

    Life happens. You are not always going to be near a kitchen, so here are some tips and ideas to keep you on track. 1. Have a plan! If you're eating out, look at the menu beforehand and pre-select what you are going to eat. Stay away from adjectives like fried, smothered, creamy, rich, cheesy, lathered... etc. 2. As a beverage choice, ask for water or fresh squeeze juice. You can also ask for a slice of lemon if you want extra flavor on your water. Lemon will also helps with your digestion. 3. Ask for whole-wheat bread instead of white bread. 4. Ask for salad dressing to be served on the side. Then use only as much as you want. 5. Choose main dishes that include vegetables, such as stir-fries, kebabs, or salads. 6. Order steamed, grilled, or broiled dishes instead of those that are fried or sautéed. 7. Order an item from the menu instead of heading for the buffet. 8. If the main portions at a restaurant are larger than you want, try one of these strategies to keep from overeating: Order an appetizer-sized portion or a side dish instead of an entrée. Share a main dish with a friend. When your food is delivered, set aside or pack half of it to go immediately (before you start eating it). 9. Resign from the "clean your plate club" - when you've eaten enough, leave the rest or pack the left over for the next meal. You can even give it to a homeless on your way to your car if you prefer. 10. To keep your meal moderate in calories, fat, and sugars: Ask for salad dressing to be served "on the side" so you can add only as much as you want. Order foods that do not have creamy sauces or gravies Add little or no butter to your food. Choose fruits for dessert. On long commutes or shopping trips, pack some fresh fruit, cut-up vegetables, or a handful of unsalted nuts to help you avoid stopping for sweet or fatty snacks. 11. Try not to eat after 8 pm or 2-3 hours before bed. 12. Avoid simple carbohydrates. (ex: sugary cereal, white bread, cookies, pasta (white), crackers, biscotti, etc) 13. Drop the Gatorade, soda and artificial teas. Water aids in weight loss. Try to consume more water. 14. Pre-make snacks and meals ahead of time. The more a person can reduce catabolic energy and increase anabolic energy, the higher their core energy will be. Finding #1: Coaching Raises Core Energy Levels The first question Waldorf was looking to answer with the data was if working with an iPEC-trained Core Energy Coach could raise a person’s core energy. To do this, she identified and studied people who had taken the ELI twice—before and after working with a coach. She found that after working with a coach, people’s average resonating level of core energy increased from 3.25 to 3.52, a statistically significant increase. “It may seem like a small increase, but it’s exponential in terms of growth,” says Liz Fisch, Senior Vice President of Program Development and Research for iPEC. “In coaching, things happen in small or large shifts, but even a small shift in any given moment can have a huge impact. If just one person shifts out of frustration and into the energy of opportunity, it can change the entire dynamic of a workplace or family. For example, one choice to be compassionately curious with your partner instead of getting frustrated can change your entire connection. It only takes one second, one shift, but it can have a lifetime effect.” Finding #2: Coaching Helps Individuals Respond Better in Stressful Situations Most of us respond to stressful situations with a lot of catabolic energy (the energy of blame and frustration), which coaching can shift us out of. Waldorf wanted to measure what that shift looked like for people under stress—which is when the shift matters most. She found that after working with an iPEC Core Energy Coach, people’s percentage of catabolic energy decreased from 68.0 to 59.0 percent while under stress, while their anabolic energy increased from 32.0 to 41.0 percent. “These are very significant numbers, especially the decrease in catabolic energy. It indicates that coaching helped people become more in control of their thoughts and behaviors rather than have an automatic reaction inside a stressful situation,” Waldorf says. Finding #3: Coaching Increases Overall Life Satisfaction “If someone’s core energy is higher and they are handling their stress better, does that impact how they report life satisfaction? Our theory was overall life satisfaction would increase as well,” Waldorf says. In fact, she was right. After coaching, people reported increased levels of life satisfaction across the board, in 14 distinct areas, from financial success and engagement at work to personal freedom and intimate relationships.
